    These are favorites in our household! Even my 'meat and potatoes eating husband' loves them...I think I originally got these from my sister-in-law when she was on WeightWatchers. ? Very easy to make!

    Cheesy Vegetable Soup
    (1 point per cup)

    2lbs of frozen veggies (or fresh) - your choice - California Medley is good
    3 cans Fat-Free Chicken Broth
    1 can of Rotel diced tomatoes
    10oz of Light Velveeta cheese

    Dump all ingredients in the pot and bring to a boil. Let simmer for 4-5 minutes. YUM!!
    You could use fresh vegetables but I use this opportunity to clean out my freezer and dump all of my opened, 1/2 bags, etc of frozen veggies.


    Taco Soup
    Makes 12, 1 cup servings. (only 2 points per cup)

    1lb ground turkety or lean ground beef or venison
    1 large onion, chopped
    1 pkg Hidden Valley Ranch dressing mix
    1 pkg Taco Seasoning
    2 cans of beans (pinto, chili, red, black)
    1 can whole kernel corn
    1 can stewed tomatoes (Mexcian flavor)
    1 can stewed tomatoes (any)

    Bown meat and onions, drain. Mix Hidden Valley Ranch & Taco seasoning into meat. Add all the other ingredients. Simmer 1 hour.
