    we make curry a lot in our slow cooker - usually modified from this - http://www.fitnessmagazine.com/recipes/quick-recipes/dinner/seven-easy-slow-cooker-recipes/ (i dont use the coconut milk, use low sodium vegetable broth, and i eat it over veggies, not rice)

    Vegetable and Chickpea Curry
    Makes: 4 to 6 servings

    Ingredients
    3 cups cauliflower florets
    1 15-ounce can chickpeas, rinsed and drained
    1 cup loose-pack frozen cut green beans
    1 cup sliced carrots
    1/2 cup chopped onion
    1 14-ounce can vegetable broth
    2-3 teaspoons curry powder
    1 14-ounce can light coconut milk
    1/4 cup shredded fresh basil leaves
    Cooked brown rice (optional)

    Directions
    1. In a 3-1/2- or 4-quart slow cooker, combine cauliflower, chickpeas, green beans, carrots, and onion. Stir in broth and curry powder.
    2. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours.
    3. Stir in coconut milk and shredded basil leaves. Spoon rice, if using, into bowls, and ladle curry over the top.

    Nutrition facts per serving: 219 calories, 8g protein, 32g carbohydrate, 7g fat (4g saturated), 9g fiber

    I ADORE my slow cooker. Best thing ever. I usually stick to one formula and it has never failed me:

    4-6 chicken breasts (frozen)
    2 cups of chopped vegetables (whatever you want, really)
    1 bottle of marinade or dressing

    Dump everything in the slow cooker, turn it to low, and let it cook all day while you're at work (about 8 hours). Serve it with some rice, quinoa, pasta, or garlic toast to get your carbs in!

    My favourite variation so far is chicken breast, cauliflower, onion, and broccoli with a smoked paprika marinade. PC makes a really great one called "Memories of Spain". *drool* I love that this basic approach can be tweaked for any flavour craving, and almost any type of sauce. I've been known to use salad dressing as well (like herb and garlic, or tomato vinaigrette) and it works just as well. It's also really great with BBQ sauce, onion, mushroom, and peppers!

    Finally, don't be afraid to grate a little cheese on top if you like. Just sayin'. :wink:
