Apple Brandy Turkey Patties

Ingredients~
1 pound freshly ground raw turkey breast
1/2 c. peeled, shredded apple
1/4 c. fine, dry breadcrumbs
1 egg white, lightly beaten
3/4 tsp. coarsely ground pepper
1/4 tsp. salt
Vegetable cooking spray
1/2 c. unsweetened apple juice
1/4 c. brandy
2 tsp cornstarch
1 TBSP water
1 TBSP chopped fresh chives
Combine first 6 ingredients in a medium bowl, stirring well. Shape mixture into 4 (1/2" thick) patties.
Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Add turkey patties, and cook 4 to 5 minutes on each side or until done. Remove patties from skillet; drain and pat dry with paper towel. Place patties on a serving platter, and keep warm. Wipe drippings from skillet with a paper towel.
Combine apple juice and brandy in skillet; cook over medium heat 2 minutes. Combine cornstarch and water; add to juice mixture. Cook, stirring constantly, until mixture is thickened. Stir in chives. Spoon sauce evenly over patties. Serve immediately.
