Lower sodium noodle bowls- homemade options?

Hey folks! One of my favorite options for lunch at work is one of the instant noodle bowls (Thai Kitchen, Annie Chun's). The only issue I have with them is that they're usually really high in sodium, which I'm trying to reduce in my diet due to a couple of confounding health problems. I've searched around a little to try and find some lower-sodium options, and I'm thinking I might try my hand at making my own spice blend or soup base and heating up with some noodles; maybe adding dried mushrooms or veggies or tofu? Has anyone out there tried this? Any recommendations?
