Carb Heaven - Smashed Potatoes

If you're looking for a DEELISH carb fix that is easy on the diet...here it is. Today I made Smashed Potatoes.

You take mini potatoes (4 = roughly 100 calories) and boil until soft enough that the fork slides easily when you test them. Then place them on a baking sheet (sprayed with Pam to prevent sticking). Smash them down with a potato masher or the bottom of a cup. Drizzle a small amount of olive oil on each one, sprinkle with a tiny bit of salt and any seasoning you like. Original recipe suggested rosemary. Bake at 450 for 15-20 minutes (depending on how many you make) and then broil for a few minutes to get them sizzling and crispy.

Then - enter carb heaven!!! They are crispy on the outside and soft on the inside and BETTER than any french fry I've EVER had.
