Shrimp Scampi (Low Fat/Low Cal)

4 tsp olive oil
1 1/4 lbs med. raw shrimp (tail on, deviened)
6-8 garlic cloves, minced
1/2 cup low sodium chicken broth
1/2 cup dry white wine (I substituted this for some more chicken broth)
1/4 cup fresh lemon juice
1/4 cup & 1 Tbsp parsley
1/4 tsp salt
1/4 tsp freshly ground pepper
-In a large nonstick skillet heat the oil. Saute shrimp until just pink, 2-3 min. Add garlic & cook stirring constantly, 30 sec. Transfer shrimp to platter, keep hot.
-In skillet, combine broth, wine, lemon juice, 1/4 cup parsley, salt, & pepper; bring to a boil. Boil, uncovered, until sauce is reduced by half; spoon over shrimp. Serve garnished with lemon slices & sprinkled with remaining parsley.
Serves 4.

I got this recipe from a website I can't remember but when I made it there was actually a little less calories than what they said. (What's stated above.) That could be that I didn't use the wine though. It was sooooooooo delicious and the serving size is pretty big with hardly any calories. Just serve with rice or pasta and you've got a delicious meal!
