I am trying to eat more vegetables but I am struggling with ideas.Veg on its own bores me.
How do you guys eat your vegetables?
Currently I am getting in a serving at luch (usually a pepper with hummus or lettuce and cucumber in pasta) and a few servings at tea, courgette roasted with pepper, onions, mushrooms and leeks served with chicken breast.
I want to slowly build up to 8 - 10 servings a day.

Low fat dressing as a dip. Works for all my raw veggies. I especially like mixing the ranch and salsa ranch. A bit of each side by side, by the time I am done, they have mixed together.0

I saute some veggies (bell pepper, onion, and mushroom) and add taco seasoning, then put it in a tortilla or a lettuce wrap for a nice veggie taco alternative, and you can still add toppings since you're saving calories.
A sneaky way too add servings is to blend veggies with a little bit of fruit and yogurt to make a breakfast smoothie- there are great recipes on Pinterest.0 -
I eat my baby carrots raw
I eat Squash & Zuchinni boiled in water with some salt and butter
Onions, Peppers & mushrooms I put on omlettes

Portabella Mushroom burgers. Trust me - they are amazing. If you get really fresh portabellas they don't even taste like mushrooms, which is great for those in my life who aren't mushroom fans. Also, if you stack it full of topings (lettuce, tomato, bell peppers, banana peppers, pickles) and some mustard it feels like a real burger. Use the flat breads as buns and you've got a really tasty, really hellthy sandwhich. I usually cut up parsnips and bake them into "french fries" as an added veggie.0

Frozen veggies microwaved with some salt and pepper and onion powder, roasted veggies, veggies in omelets/frittatas, mashed everything (cauliflower, carrots... love them), salads...0

I only raw veggies in salads, otherwise, I use Mrs. Dash and a little olive oil on my veggies.0

I could write a book on how I eat my vegetables. Carrot sticks - my favorite is with peanut butter. But I put carrots in many dishes I cook - stir fry, beans and rice, soups, stews, chili.
Stir fry is a great way to eat veggies. Roasting is also. Many vegetables are good on the grill. Vegetable lasagna. Veggie pizza.
I can get 2 servings of vegetables in a sandwich wrap - One large handful of greens (spinach, baby kale, arugula, etc.), various thinly sliced or shredded vegetables and some type of protein (tuna, egg salad, leftover meat, hummus, etc.) dressed with mustard or hot sauce and rolled into a high fiber wrap.0 -

8-10 servings of carrots per day, or vegetables in general? Sorry just curious...that sounds like a major carrot overload to me!
I love raw baby carrots with lunch. Either with hummus and/or a light cheese wedge, or by themselves along with other foods.0 -
Carrot Fries! Just made them last night.
I buy the pre cut stix in water. Toss em in two teaspoons of olive or coconut
oil, sprinkle of garlic powder, sea salt, pepper, paprika roast
400 x 15 minutes. Flip, roast another 15 minutes.

Any root veggies: carrots, parsnips, sweet potatoes, turnip, potatoes. Cut into french fry-sized sticks, toss in sea salt and olive oil and roast in the oven on high heat. YUM!
Raw: carrots, celery, cucumber, peppers, *fennel/anise* (my favourite), sugar snap peas. Usually plain or with a dip made with Greek yogurt and herbs.
Stirfries: bok choi (the best!) with peppers, mushrooms, carrots, snow peas0 -
straight up, or with hummus. But normally just the carrot. Sometimes I'll steam them.0
