Healthy Low Carb Italian for Potluck

Hi everyone! I am in need of a healthy low carb Italian dish to make for Potluck. Also fairly easy and not too pricey!! Can anyone help me out? I can use Dreamfield pastas if that helps!! Thanks!

    I found a Chicken Sausage recipe a few weeks ago, i'm sorry I can't find the link, but it was delicious, chicken sausage, tomatoes, zucchini, and a few herbs. I checked my diary and it was about 8g carbs per serving and pair it with any pasta, i used Ronzoni Smart Taste and that was about 31g carbs.

    No Pasta - you'd never miss it! This is the original recipe plus my changes.

    Italian Chicken With Mushrooms and Spinach
    1 lb boneless skinless chicken cutlet (4-6 breasts)
    1/2 teaspoon kosher salt
    1/4 teaspoon pepper
    2 tablespoons olive oil
    6 ounces fresh spinach leaves (½ - ¾ lb.)
    ¼ cup white wine (I don’t use this)
    1 cup sliced mushrooms – (2 cups, or two packages)
    1 garlic clove (finely chopped) (I use lots more)
    14 1/2 ounces crushed tomatoes (Large 28 oz. can)
    4 ounces fresh mozzarella cheese (sliced thinly) (More)
    I sprinkle lots of shredded mozzarella cheese on top, not
    fresh

    Mix together spinach, crushed tomatoes, mushrooms and garlic

    Season both sides of chicken with salt and pepper while waiting for sauté pan to heat.
    Place olive oil in pan and swirl to coat bottom.
    Lightly brown chicken on one side.
    Turn chicken and add remaining ingredients (except cheese) and cover.
    Let cook about 5 minutes or until chicken is done.
    Remove from heat and top chicken with cheese slices.
    Cover and let stand for a couple minutes until cheese melts.

    I bake it, covered (maybe 45 min. at 350º) then sprinkle the cheese on top and continue to cook uncovered until the cheese browns.

    I love to sautee up a bunch or two of kale (the dark green Tuscan kind is best, but regular kale is good too) with some minced garlic & EVOO, (wash, stem & chop the kale, drain well). Then serve with marinara sauce. You could layer the kale in a baking dish, top with sauce, sprinkle with cheese if you'd like & bake just until heated through.

    I made super delicious stuffed peppers last week. I used 93/7 ground beef, baby portobellas, sauteed onions, and garlic as the stuffing. I covered them with a jar of marinara and a little shredded mozzerella. They were filling, easy to make, and pretty cheap. One large green pepper made 2 servings.
