Supper Help!!

Hi: I need a protein idea for supper tonight! It has to been prepped and cooked in under an hour and can not be grilled. (I also had chicken breast yesterday.) The sides are cauliflower and potato mash with a nice lovely garden salad.

Any ideas would be awesome!!!

    frozen cod (butter, garlic salt, onion powder, paprika, lemon pepper and a splash of lemon juice) bake at 450 for 15 mins

    Ingredients:
    Olive Oil
    Chicken
    Paprika
    Chives
    Minced Onion
    Minced Garlic
    Spinach
    Cheese (I use Pepper Jack, but Mozerrella or Parmesan will work)


    Cut chicken into chunks and saute at medium heat over olive oil
    Add Chives when it's about 50% cooked
    Add Garlic, Minced Onion, Paprika when it's close to 80% cooked
    Add Spinach and cook chicken to fully cooked
    Finally add cheese and mix util it's melted around and evenly distributed

    I tend to pair this with quinoa, potato, or rice. The cheese and chicken gives it a good serving of protein and it just happens to be low carb which is why I love it!
