I need supper idea for tonight!

Hi: I need a protein idea for supper tonight! It has to been prepped and cooked in under an hour and can not be grilled. (I also had chicken breast yesterday.) The sides are cauliflower and potato mash with a nice lovely garden salad.

Any ideas would be awesome!!!

    It is not me who would care, but the family would. And I hate making two meals for three people.

    London Broil....8 minutes per side under the broiler. Doing one tomorrow.

    My personal favorite: take a chicken breast, filet it in half and put between the two pieces red peppers, fresh basil leaves and a laughing cow wedge.. bake until chicken is done and bam, most amazing and easy meal ever!!

    Use the chick breast again but marinate in yogourt, then add tandoori spices and broil. Easy & cheap and for some maybe, exotic.
    We eat this when I'm having a clueless foodplanning day.

    that sounds deliciously good.

    I have a 4 ingredient cook book that has a soy sauce + sour cream mixed together (looks ATROCIOUS) pour over chicken in a cassarole dish- back for an hour till it hits 160-175 internal temps... boom- done.

    delicious.
  • It's Fish Friday at our house! Dress it up with a nice herb rub or a little lemon pepper and it will pair lovely with your mash and greens. Fast and easy. A good lean protein, leaving you a few extra cals for that extra glass of wine. It's Friday, no one will judge.
