Where it says 1-3 hours light exercise, 3-5 hours moderate exercise, etc, how do you know which one you are doing? What if you're doing less than 3, but it's moderate?

It's just an estimate. Be as accurate as you possibly can, then follow your new goal for a few weeks & reevaluate. (TDEE includes exercise, so do not eat back any exercise calories. That would be double dipping.)

Weight loss takes a whole lot of trial & error to find what works for you. Read this: http://www.myfitnesspal.com/topics/show/1080242-a-guide-to-get-you-started-on-your-path-to-sexypants

    TDEE is an estimate.

Pick one (light or moderate) and then carefully track your calorie and exercise on a consistent basis for six weeks. Re-evaluate the TDEE number and adjust the number accordingly. If you're consistent with your routine you can find a the right TDEE that fits your activity level.

The calculators are simply a starting point.

ETA: editorgrl apparently types faster than me

Great minds think alike: It's all about the trial & error.
