veggies and fat

I realize that in order to best absorb all of the nutrients from veggies (including those which are fat-soluble) you need to include a small amount of fats. I'm a bit confused as to the timing of the fat compared to consumption of the vegetables. Does the fat need to consumed essentially at the same time (basically same meal) as the vegetables or do I have some flexability say within 4 hours (or whatever timing)? Will I still absorb the fat soluble vitamins if I snack on some veggies and then a hour later eat a piece of cheese? I'd still be eating the same amount of food, both calorically and volumetricly , but rather adjusting the timing of when it is eaten.

    As for my use of small amount of fat, I guess a reasonable amount fo fat would have been a better choice of words. Veggies that are completely drenched and soaked in butter is more fat than is required. I do understand the importance of fat, I'm just trying to get the most bang for my buck out of the food i'm eating. It is impression that the micornutrients (vitamins A, D, E, K) get past the absorbtion stage of digesting rather quickly.

    Ideally you would want to have some fat with a meal that was all veg.....but that is probably a pretty isolated incident. Don't complicated it, just eat a balanced diet daily and you'll be fine.

    I like to sautee spinich in olive oil and garlic or bake asparagus coated with a light sheen of olive oil. I think that would get you the fat. You need very little oil when doing this, a tablespoon at the most.

    There are many vegetables that have some natural fat as well, such as avacados.

    I don't think that you need to worry about this too much, as we all know, fat is everywhere!

    Keep in mind that the vitamins that you are talking about are already present in fat sources that you are eating ( ex. vit D present in fish oils and salmon vit A butter, yoke, and so on )
    so they are already yaking care of themseves

    Just add a few seeds or nuts to your salad. You get the necessary fats to help absorb the nutrients in the veg. A few sunflower seeds or some toasted sesame. Crushed cashews or walnuts in a homemade dressing really add some great texture to your salad, too.
