Meal Prepping. Ideas?

Me and a friend have decided to start meal prepping on Sundays and Wednesdays in order to stay on track. We figured this would help eliminate the need to go out to eat, keep us from straying from the diet, encourage healthy snacking, and overall make dinners easy to put together. (We also figured if there is healthy foods ready to go in the fridge then the boyfriends will hopefully start eating healthier as well)
We aren't on any crazy diets, just low-carb/high protein diets with a good mix of vegetables thrown in there. Any ideas on meals we can prepare that will hold us through the week? My weak point is that I need a variety of flavors, I get bored with one taste for too long.
Also any thoughts on meal prepping overall? Tips, tricks, etc?

Sunday is my meal prep day for my weekly lunches. I usually roast a chicken or some pork tenderloin. I pull the chicken or cut the loin and take it all to work in containers. I then use the chicken carcass to make soup for my dinners that week. Otherwise, I eat salmon and edemame every night.
To go along with my lunch meat, I usually cook some quinoa or couscous and sautee onion, garlic, peppers and eggplant (or similar) and take it all as well. I usually take a bag of grapefruit or other fruit and ALWAYS keep a jar of almonds and/or peanut butter at my desk, along with brown rice cakes or some very lite bread for snacking.
Prepping for the week has not only saved me money but saved it MANY calories as well.0
