Raspberry Muffins

1 cup lowfat buttermilk
1 egg
3 Tbsp canola oil
1 cup fresh raspberries
1 Tbsp baking powder
1/2 cup sugar
2-1/2 cups unbleached all-purpose flour
Prep & Cooking Time: 40 min.
Yield: 12 servings Serving Size: 1 muffin
Directions:
Preheat oven to 400 degrees F (200 degrees C). In a medium bowl combine flour and baking powder and mix well. Add sugar and mix again. In a small bowl mix eggs together and add milk and oil, mixing well. Pour the egg mixture into the flour mixture and quickly mix to make batter. Add raspberries and stir until evenly distributed. Line a muffin tin with paper cake cases. Spoon mixture into paper cases to make 12 muffins.

Total Fat: 3.99 g Protein: 3.60 g
Sat Fat: 0.42 g Fiber: 1.40 g

You can also substitute unsweetened applesauce for the oil and use whole wheat flour instead.
Try to cut the sugar in half by using just a 1/4 cup of sugar & the rest with Splenda.
