    Baked Sweet Potato Fries

    Ingredients

    Olive Oil, for tossing
    5 sweet potatoes, peeled and sliced into 1/4-inch long slices, then 1/4-wide inch strips, using a crinkle cut knife
    1 tablespoon House Seasoning (recipe follows)
    1/2 teaspoon paprika
    House Seasoning:
    1 cup salt
    1/4 cup black pepper
    1/4 cup garlic powder
    Directions

    Preheat oven to 450 degrees F.

    Line a sheet tray with parchment. In a large bowl toss sweet potatoes with just enough oil to coat. Sprinkle with House Seasoning and paprika. Spread sweet potatoes in single layer on prepared baking sheet, being sure not to overcrowd. Bake until sweet potatoes are tender and golden brown, turning occasionally, about 20 minutes. Let cool 5 to 10 minutes before serving.

    For the House Seasoning:
    Mix ingredients together and store in an airtight container for up to 6 months.

    Simple but delicious:

    Potato Egg Bake

    Directions

    Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 7 minutes or until tender; drain.
    Spread potatoes in a 13-in. x 9-in. baking dish coated with cooking spray. Top with the broccoli, onions and red pepper.
    In a large bowl, whisk the remaining ingredients until blended. Pour over vegetables. Bake, uncovered, at 350° for 35-40 minutes or until center is set. Yield: 8 servings.

    I've made these Pioneer Woman Crash Hot Potatoes several times - they are great with steaks, pork chops, eggs...

    The best variation I've tried is with bacon infused olive oil, some minced garlic, and lots of fresh rosemary, sea salt, and cracked plack pepper...

    This is a family gathering staple in my family...


    TEXAS POTATOES

    2 lbs. frozen hash browns
    1 c. chopped onion
    1 can cream of chicken soup
    8 oz. grated cheddar cheese
    1/2 c. butter
    1 pt. sour cream
    1 tsp. salt
    1/4 tsp. pepper
    2 c. crushed corn flakes


    Mix hash browns, onion, soup, cheese, salt, pepper and sour cream. Pour into greased 13"x9"x2" pan. Top with corn flakes mixed with 1/2 cup melted butter. Bake 1 hour at 350 degrees.
