Choice Cuts - calories

I bought some potatoes the other day and I'm researching different things to do with them. I never knew there were so many possibilities.

This chart is pretty helpful, so I thought I'd share it.

I'm wondering if I can use certain cuts for other purposes though. I have a feeling I'm going to end up with a lot of "roasted" cuts. Can I shred that for hashbrowns? Or slice it up and fry it like the French fry cut? This is all a little overwhelming, but I don't want to let any of it go to waste.

Also, does anyone have a handy reference for the calories in the different cuts?

    Not sure on the calories. Sorry. But do not NEVER use the French fry cut in place of the pancake cut. Big mistake! Toughest pancakes ever. Be sure you wash the shoestring end very well!

    See, I think this image shows why it's so hard to butcher potatoes correctly. I can't tell the pancake end from the au gratin cut and I bet this lady can't either.

    I'm at home sick today, you guys have creased me up and really made me feel better. I've laughed so much at the potato threads. Laughter really is the best medicine. Any ideas about the healing properties of the potato for a throat/ear infection?
