Healthy spaghetti

I realized, as I became old enough to care, that my mom hid veggies in everything! This was a weekly recipe she used and it definitely got us kids to eat our veggies. I hope you and your kids enjoy it.

Serves 6

1 pkg. lean ground turkey
2 small zucchini finely chopped
1 onion finely chopped
6 oz. chopped baby bella mushrooms
2 cloves crushed garlic
1 tsp. italian seasoning
1 tbls. olive oil
1 tsp. salt and pepper
1 jar trader joes brand pasta sauce (any flavor will do)
3 c. cooked whole wheat pasta (i'm using penne)

Heat olive oil in a very large, heavy, non-stick skillet over medium to medium high heat. Add turkey and italian seasoning brown 5 min. stirring occasionally. Add all veggies, incl. garlic, salt, pepper and cook til veggies are soft and turkey is cooked through. Add sauce and heat through. Check seasonings. Serve over 1/2 c. cooked pasta and enjoy. I'm serving it with broiled zucchini and green salad.

    Love it! Never thought to "hide" zucchini in it! Could also be used in lasagna...

    Sounds delish! I'm going to try this without the turkey and use the Schwans LiveSmart meatballs (my kids have no idea they are made with turkey, pork, mushrooms, and spinach)!

    Just use your favorite brand of all natural pasta sauce...check the calories and fat and choose the lowest

    I don't either... but I'm sure any low-cal pasta sauce would work.

    Its also yummy to hide grated carrot....give the sause a bit a sweetness.

    another way to make spaghetti healthier is replacing the pasta with spaghetti squash
