Question about weighing food?

I'm sorry if this is kinda long. All my life I have cooked for a lot of people 8 to 10 every night. The last 2 months I just have to cook for 4 people, and I have not figured out how much food I need to cook for just 4. So every night there is always a lot of food leftover. I'm the only one of the 4 that needs to loss weight. My 2 kids takes after my husband. They are tall and skinny. My daughter just barely weighs enough to be considered normal weight so they don't have to eat the same kinds of food I need to eat. Most of the time I cook 2 meals every night. But not every night do I have time to cook 2 meals or some nights I eat what I fix for them. I know you don't have to give up all the foods I like I just need to eat it in moderation. My question is when weighing every ingredient that I use when making the meal how do I know how much of that am I getting? I have tried to make my own recipes on here with all the ingredients and trying to figure out servings and serving sizes but it's like I said there is always a lot of leftovers. Any help or suggestions please.

My digital scale can hold up to 11lbs. So what I do for example say a pot of Chili. I put the bowl on my scale and then 0 it out and then put all of the chili in the bowl. Get my weight and then divide that by how many servings I want to get out of it. Then I weigh out my 1 portion that I am going to eat. Hope that makes sense. If not let me know.0

I take the weight of cooked food (entire dish) you can calculate the calories of the recipe and if you eat 15oz and the dish was 100 oz or 6.25 pounds then you consumed 15% of the dish it will be close but not perfect. Its nice to eat as a family and know at-least approximately what you consumed personally. Low calorie items I guess at such broccoli, if its on the table in the bowl I know a scoop weighs roughly 100 grams, that's close enough as 100 grams is 34 calories, so even if I got 110 grams its 37.4 calories not a big deal. Weighing every thing can make me crazy.0
