Food Issues

So I have some food intolerances:
Eggs make me severely ill, for HOURS.
I can have lactose but only in very small quantities, I do better with full fat things, since most lowfat dairy has added lactose.
Fresh fruits make my mouth, nose, throat, and eyes itch. The protein involved of which I am allergic gets broken down with cooking.
Almonds, hazlenuts, walnuts all make my face swell up.
Popcorn is beginning to have the same effect as the milk and egg issue.
I avoid soy since it has a lot of estrogen in it. And soy milk makes me itch for some reason.
I am down to one nursing session a day with my one year old. So I feel like I can start counting/cutting calories. The probelm is that I am having a hard time finding things that are not overly processed for breakfast proteins. I would ideally like to only eat things with 5 ingredients or less.
I am currently 178 and 5'7.5". I want to lose another 15 lbs by May 20. MFP says 1200 calories a day but that seems pretty low. Thoughts? Suggestions? Bueller? Bueller?
