How do you manage your PCOS?

So I got this diagnosis a couple of months ago. But I'm still struggling to find a diet that allows me to manage my insulin AND still enjoy the foods I love in moderation.
How do you do it? Do you monitor your macro ratios (if so, what percentage)? Do you just omit bread and pasta? How do you get your protein? What other tips or tricks have worked for you?
I actually expect the responses to this to look generally similar, but if you can give me an idea of what your diary might look like for a day that would be much appreciated.
I know the question will come up. I am on Metformin (500 mg twice daily) and Aldactone (no idea of dosage at the moment but also twice daily).
