HALP! I'm NOT hungry!

I have been trying to up my calories to a more reasonable amount. I average 1400 a day and am trying to get to 1700-1800 to be at a more reasonable deficit. I end up logging for 1700, and then going back the next day and deleting all the food I didn't eat the day before because I just wasn't hungry. Anyone else have this issue and how did you solve it? Hubs says just don't eat if I'm not hungry...

    A tablespoon of peanut butter has 100+ calories and doesn't take up much room.

    Avocado.

    Hummus.

    An ounce of cheese.

    two tablespoons of olive oil is 240 calories and not that filling
