Oven Roasted Vegetable Recipes

I have been making the same recipe for several years now (red or sweet potatoes, bell peppers, onion, carrots, mushrooms drizzled with olive oil and balsamic), and it's tasty, but it's getting kind of tired.

What kind of flavor/veggie combinations are fantastic and flavorful? I love all types of veggies, so throw some ideas at me. :smile:

    I like to roast broccoli or cauliflower (spray with cooking spray lightly or toss with a little bit of olive oil) at 400F for about 20 minutes. Good with salt/pepper, garlic salt, seasoned salt, or THIS ---> http://www.mccormick.com/Spices-and-Flavors/Grill-Mates/Marinades/Grill-Mates-Chipotle-Pepper-Marinade (my new favorite). Sometimes I'll sprinkle just a little bit of cheese over top as well.

    parsnip, turnip,swede with olive oil and drizzled honey (a little goes a long way) or Mediterranean veg with basil and lemon juice is good too

    Beets and carrots drizzled with a honey and lime mixture. Bake in a foil pouch until they are as tender as you like.


    I also love this recipe which has potatoes, cauliflower, brussels sprouts and sweet potatoes.

    (Yield = 6 side dish servings)
    Ingredients:
    1/4 cup extra-virgin olive oil
    1 large sweet potato, chopped into 1-inch thick cubes
    3/4 cups Brussels sprouts (about 1/2 pound), halved
    1 1/2 cups red potatoes, cut into 1-inch thick cubes
    1/2 head cauliflower, florets split in half
    1-2 cloves of garlic, roughly chopped
    1/4 teaspoon dried rosemary
    1/4 teaspoon dried thyme
    1/4 teaspoon dried sage
    1/4 teaspoon sea salt
    1/2 teaspoon freshly ground black pepper

    Directions:
    1. Preheat oven to 400 degrees F.

    2. Spray a baking dish with olive oil spray.

    3. Toss all vegetables and seasonings with extra-virgin olive oil and place on baking sheet.3. Bake for 15 minutes, mix and add more oil if the vegetables seem dry. Bake an additional 20 minutes.

    broccoli with garlic oil - finished with lemon juice and some grated parmesan
    White cabbage and/or leeks/aubergine/cauliflower etc - olive oil, salt, pepper and cumin - addicted to this at the moment

    I second the parmesan cheese. Amazing on roasted veggies.

    Also, minced garlic and olive oil.

    Toasted sesame oil can be a yummy (and fragrant) addition to roasted veggies.

    Just tried several slices of eggplant each topped with a slice of tomato, add the oil of your choice, and shredded cheese atop that. Delish!

    Brussels Sprouts- not roasted but delicious!

    12 oz. fresh brussels sprouts, trimmed and halved if large
    1 Tbsp. Olive Oil
    1 Tbsp. Oleo
    1/4 Cup Chicken Broth

    Heat 1 tablespoon oil and 1 tablespoon butter in a large nonstick skillet over medium-high heat.
    Add Brussels sprouts; sauté 2 minutes or until lightly browned. (I sautee them until they are nice and brown)
    (Could add garlic, too)
    Add salt to taste and 1/4 cup broth to pan; cover and cook 4 minutes or until crisp-tender.
