The nutritional information on this is using regular coconut milk since I was unable to find the light version in the sparkcalculator database, so you know that will lower things significantly. Even with the regular coconut milk, it is pretty low in fat and calories.

Grilled Spicy Asian Shrimp

Prep Time: 5 mins.
Cook Time: 10 mins.
Marinating Time: 60 mins.
Serves: 6

Ingredients:

1 lb of raw, medium shrimp, peeled and deveined
2 cloves garlic, sliced
1 jalapeno, sliced
1/2 c light coconut milk
1/2 cup Newman's Own Lighten Up Low Fat Sesame Ginger Dressing
1 tbsp. grated lime peel
1 tbsp. fresh chopped cilantro



Directions:

In large bowl, combine shrimp with remaining ingredients. Marinate for at least one hour. During marination time, soak wooden skewers in water for 30 minutes. When shrimp is done marinating, thread 3 shrimp on soaked skewers. Save marinade. Take the remaining marinade and place in a pot over stove or grill. Bring up to simmer, then set aside. Place skewers on medium, to medium-high grill, for 2-3 minutes per side. Remove from grill and place on platter. Drizzle cooked marinade over the shrimp and top with sliced green onions and serve.
