Calories....

Trying to eat healthy and get my calorie intake up to what it should be isn't as easy as I thought my food diary keeps telling me I'm under the correct intake... but I'm eating loads of salads and vegetables. Will it be ok if I don't meet them everyday??

    What about protein and fats?

You could cook your veggies in a little olive oil.
Add some avocado to a salad.
Have a handful of nuts for a snack.
Eat an apple with a little peanut butter.

It's okay to come in under once in awhile. Some people do better trying to balance the calories out over a week vs trying to get the correct deficit everyday. Some people only restrict 2-3 days out of the week and eat at maintenance the rest of the week. The most important thing in regards to your health though is to make sure your getting enough of your Macro and Micro nutrients in. If your not getting enough of your macro/micro nutrients (no matter how many calories your eating) your health will suffer as a result. MFP warns you when you get to low, because it is hard to get all of the macro/micro nutrients your body needs for optimal health.

Willing to miss your goal weight by the same % amount, and just say that's close enough?
    You meet a goal.

Where's your protein and fat in that diet?

Don't do whole sale change attempts, or you'll be doing this again next year, with perhaps more to lose, and harder to do so.

healthy fats are the ones from whole plant food, like nuts, seeds, avocado, etc.

Unhealthy fats are vegetable oils, especially hydrogenated oils, and animal fats.

    What about proteins? fats?

Are you planning on eating nothing but diet food the rest of your life? If not, then take what you *were* eating, and just eat *less* of it.

The goal is not just losing weight -- the goal is being able to eat in the real world and still maintain a healthy weight.

Keep your diet to 80% of healthy, nutritious foods, and allow the other 20% for less healthy foods, like chocolate, ice cream, whatever you fancy.
You do not need to take on this diet mentality, that is how you fail.
The idea is to change your lifestyle in a way that is sustainable for life.
You do not need to live on vegetables and salads alone. That is why you struggle to eat enough calories.
Add in healthy fats from nuts, seeds, fish, avocado, full fat dairy.
Get plenty of protein from lean meats, fish, dairy, beans, lentils.
Make sure you are not going too aggressive on your calorie goal. Very few people need to drop down to the bare minimum of 1200 to lose weight and dropping so low to start, leaves nowhere to go if you hit a plateau.

The healthy eating over load is down to me losing a stone in 6wks for my birthday night out which I've achieved with a struggle if I'm honest, as of next week ill be allowing myself pretty much of what I want to eat within reason... I did tend to eat what ever I wanted but I've seemed to hit a stage in my life where I can't keep the muffin top at bay as easily as I used to.. my exercise used to consist of walking my dogs everyday an aqua aerobics/swimming 3 times a week which is clearly working anymore, my plan now... more exercise not as much junk food an getting a healthy mind an body through good food :)
