Cooking light saves the week again!!!

So again Cooking Light to the rescue. Even with baseball everyday this week but Friday, my family is going to eat healthy and all the dinners take under 45 minutes to prepare. The menu for the week:
Monday-smoked chili (this one is in the crockpot all day)
Tuesday-kid-tastic pizzadillas
Wed-blue cheese-stuffed pork chops with pears
Thursday-chicken curry
Friday-korean style beef skewers with rice noodles
Saturday-maple crusted chicken thighs
Sunday-potato crusted chicken fingers with homemade sweet potato fries

The kids really like about 90% of the recipes from there, even when they are not geared toward kids. I have been making a little extra each night and saving that for my lunches as well. Then I make homemade granola on Sunday and mix that with 2% plain greek yogurt for a filling healthy breakfast and alternate that with a banana smoothie (also from cooking light). The key is in the planning. If I don't plan, purchase and prep on Sundays then this does not go as smoothly. I would say about 1 time every 2 weeks there is an OH CRAP night, where I just don't have enough time and we have been doing subway that night or something else quick. Although, my food bills have looked really high, when we added up all the money saved on not eating out and the fact that we are eating SOOOOO much healthier it has really been worth it. My next step is figuring out how to cook EVERYTHING on Sundays and freezing for the week, but I have not gotten to that yet. With my oldest son joining a 2nd baseball team, he made a local select team yesterday, that is going to be my next step in this eating overhaul my family is undertaking.
