Ricotta Cheese

I love Ricotta cheese and I found out today that it hardly has any calories or carbs. Well compared to other cheeses. Any ideas on some good healthy stuff to make with it?

    Homemade veggie and ricotta/meat and ricotta ravioli
    Zucchini wraps...similar to manicotti but without the pasta

    Ricotta cheese is versatile, yummy, and very healthy!

    Mixed with herbs and lemon juice to use as a dip
    With fresh berries as a yummy snack or dessert
    Blended with a little sugar and cocoa powder = chocolate mousse

    I use it in a lot of dishes with grilled or roasted vegetables (especially peppers, tomatoes, zucchini):
    on a pizza, as part of a filling for stuffed peppers, mixed with grilled veggies and pasta, in a quiche or frittata, in an omelette, on a tomato sandwich.

    Lots of recipes made with Greek yogurt or cottage cheese may also be done with ricotta, so the sky's the limit!

    I like it spread on toast with a drizzle of good olive oil and fresh cracked black pepper. YUM!

    I love it sweet (shocking, I know). With vanila extract and a drizzle of honey on waffles or French toast. Mixed with jello pudding mix (and stevia if sugar free) and a bit of milk for a yummy pudding.

    Or in lasagna.

    I'll be following this thread, I still have some in the fridge.

    I just found this recipe this morning. Will be making this soon!

    Spinach Quesadillas

    4 cups fresh baby spinach
    4 green onions
    1 small tomato, chopped
    2 tbsp lemon juice
    1 tsp cumin
    1/4 tsp. garlic powder
    1 cup shredded Monterrey Jack cheese
    1/4 cup ricotta cheese
    6 flour tortillas
    1/4 cup light sour cream

    Place first 6 ingredients in a large nonstick skillet, cook and stir over medium heat just until spinach is wilted. Remove from heat, stir in cheeses.

    Top half of each tortilla with spinach mixture, fold other half over filling. Cook over medium heat 1-2 minutes on each side or until golden brown. Serve with sour cream.

    Per serving (In this total the recipe used reduced fat cheese, reduced fat ricotta & fat-free sour cream)
