I made this over the weekend so I would have something low cal and delicious to eat all week for lunch. Any variations are acceptable! It came out to around 105 cals/ one cup serving. Many of the ingredients I used were organic, however that is completely up to you!

4 Large Carrots
One Large Yellow Onion
4 Large Celery Hearts
One Large Parsnip
One Bunch Kale
One Bunch Spinach
1 Lb boneless skinless chicken breast
10 cups chicken stock
1 tblsp salt
1 tblsp pepper
1 tsp ginger
1 tsp soy sauce
1 tsp chili powder
1 tblsp olive oil

In a large stock pot sautee onion in olive oil until translucent over medium heat. Add chopped chicken breast and sautee for 3-5 minutes or until it starts to brown. Add in all veggies EXCEPT spinach and kale and add all spices. Stir and sautee mix another 3 minutes. Then add your broth, turn heat to high and bring to a boil. After it boils, turn down to low-medium low and simmer for 20 minutes. Then add kale and spinach and simmer another 5-10 minutes or until tender. YUM!

*Ginger and parsnip give it the slightest bit of curry-like sweetness. Omit if you do not want that.
