Slow-cooker Lenten (no meat or dairy) meals

Chana masala!
Two cups dried garbanzo beans (or three cans, drained)
Three cups water or stock (if using dried beans); one cup if using canned
One can coconut milk
One large onion, diced
Five minced garlic cloves or five teaspoons jarred pre-minced garlic
Curry paste or powder to taste (I used five heaping tablespoons of red curry powder)
Optional: two tablespoons panch puram
Throw everything in the cooker on low for 10 hours if using dried beans/6 hours if using canned OR on high for 8 hours if using dried beans/3 hours if using canned. Finish at serving time with a squeeze of fresh lime or lemon juice.0 -

Also pesto based pasta with greens and sdundried tomato's
