I am having trouble balancing my macros?

I am not following the recommendations on here because I'm following my trainers instructions instead. Starting 3 days ago he wants me to eat 200 carbs, 100 g of protein, and 30 g of fat everyday but I'm having a lot of issues getting those correct. He said that I could be +/- 5 g of each macro.

Today I hit my protein and fat but ate too many carbs

Yesterday I ate WAY too many carbs, like 50 over, WAY over on fat, and under on protein.

Day before that, I ate perfect carbs, a little too much fat and not enough protein.

I don't want to just eat meat all day long because that stuff is disgusting. I have to force myself to eat it to get my protein up and I hate hate hate protein shakes. Also I am having trouble getting my sodium content down. I feel so bloated and gross.

Just for extra info, he has me doing strength training twice a week and 25 minutes of cardio twice a week. So I'm not sedentary.
