Pumpkin's yummy...any recipes?

I'm in a pumpkin frame of mind lately, and wondered if any of you have favorite, relatively healthy pumpkin recipes you'd like to share. Thanks in advance for feeding my habit!

    I use like a 1/5 cup of baking splenda, and mix a can with about a tbls of pumpkin pie spice.

    It's good cold or warmed up.

    Not really a recipe per se, but I love it in oatmeal. I cook plain oatmeal (rolled oats) then add in a giant dollop of canned pumpkin, some spices (cinnamon or the blend called Pumpkin Pie Spice) and also a handful of slivered almonds for crunch.

    Pumpkin Pancakes

    1/2 cup canned pumpkin
    1/2 cup low fat vanilla yogurt
    1/4 tsp baking soda
    1 whole egg
    3 egg whites
    1/4 cup flour
    1/4 tsp salt

    Mix all ingredients well. Heat large skillet coating with nonstick spray and spoon 1/3 cup batter out for each pancake. Flip when covered with bubbles and edges are slightly brown. Serve with a little maple syrup (my preference) or honey. Makes 6 pancakes.

    Pumpkin pudding

    1) Crush up graham crackers or ginger snaps and put in the bottom of 6 containers (small bowls or coffee cups)
    2) Make instant vanilla pudding with 2 cups lowfat milk
    - add 1 1/2 T brown sugar
    - add 1/2 cup canned pumpkin
    - add 1 teaspoon pumpkin pie spice
    3) Pour into cups over cookies and put in fridge to set.
