I'm in a pumpkin frame of mind lately, and wondered if any of you have favorite, relatively healthy pumpkin recipes you'd like to share. Thanks in advance for feeding my habit!

    Easiest for a pumpkin fix is just put some in oatmeal with pumpkin pie spices.

    pumpkin protein fluff

    take half cup canned pumpkin , freeze it in ice cubes
    then take a scoop of whey protein
    and 1/4 c skim milk
    use a stick blender to combine
    then change to whisk attatchment
    whisk 3-5 minutes,
    add vanilla and cinnamon and splenda
    blend for 30-40 seconds

    Voila

    Yep this is what I do with it. Specifically:

    Combine in a bowl:
    1/2 cup quick oats
    3/4 cup unsweetened almond milk
    2 tbsp pumpkin
    dash each of cinnamon, cloves, and nutmeg
    1 packet stevia
    A couple drops of vanilla if I'm feeling extra sassy
    Micro for 2 minutes. Delish!

    Lately I've been combining the oats, spices, and stevia in ziplock bags so I can just dump it into a bowl in the AM and add the milk and pumpkin real quick.

    Soup. Fry an onion or a shallot in a bit of oil, add cut up pumpkin and water to cover. Add some salt and curry powder. Cook until done and blend until smooth. Even more delicious with some toasted sesame seeds on it.

    Could also be made with canned pumpkin.
