Quick and easy ramen with vegetables

1 pack of ramen
1 cup of bok choy
Half a red pepper (chopped into squares)
150g of cooked chicken breast (or about one breast)
1 stalk of spring onion (chopped)
1 stalk of lemon grass
1 egg
A few slices of daikon (or regular white radish)
Soy sauce to taste

Optional
chopped sprig of coriander/cilantro

I advise not using the seasoning packet that comes with the ramen and instead using the spices below if you can
1 tbsp of sweet chilli sauce
1/2 tsp of garlic powder
1/2 tsp of ginger

Method
Pretty easy, just boil some water (a few cups should do) in an pan on high heat, toss the ramen in first, then the chicken with the stalk of lemon grass.
Then, crack the egg straight into the pan and do not stir. Once they're almost done (3-5 minutes) add the vegetables and spices and leave to simmer for a few more minutes. (I'm assuming you stuck to the recipe and used cooked chicken, I always have some lying around). Remove the lemon grass stalk.
Now the meal is complete! Serve and consume immediately because cold ramen is not appetising.

Mine came to about 400 cals and it filled me up for a long time. I recommend drinking water with it because although it is low calorie the sodium content is quite high.
