Hi! I have a newborn and he likes to breastfeed a LOT.....meaning that I generally only have use of at most one hand at a time. I am a little tired of sandwiches, yogurt, etc. Anyone have ideas for EASY meals that require little/no cooking and can be eaten one-handed?

Old fashion oatmeal is easy to cook in microwave. Rice easy to cook in rice cooker. Old fashion boiled eggs. Freeze grapes and snack on them.

OMG I have BEEN there! My husband and I both became masters at eating with one hand. :)

I would suggest cutting up fruit and veggies in advance and having those on hand for snacking. Great for dipping in hummus, or yogurt dips, etc.
I make a homemade trail mix, easy to munch on and has both protein (nuts and seeds) and carbs (dried fruit, granola, etc.)
Baked potatoes topped with salsa and/or greek yogurt.
    Whole grain crackers and cheese.

....and master those one-handed fork skills :)
