can any of you wonderful cooks tell me how to cook breaded fish so that the bottom of it isnt soggy? I usually dip it in a little bit of milk and bread it with panko bread crumbs and bake it on a cookie sheet???

    Bake it on a broiler pan so the juices can drip through.
