Someone started a thread about the Hungry Girl diet. Went to google more about it and found just what I wanted, RECIPES!!!!
Buffalo Wing Meatballs with Ranch Dip
1/8th of recipe (3 meatballs plus 1 tbsp. dip): 103 calories, 4g fat, 507mg sodium, 3.5g carbs, 0.5g fiber, 1.5g sugars, 13.5g protein -- PointsPlus® value 3*
Ground chicken is generally WAY fattier than you might suspect. Lean ground turkey, on the other hand, is juuuust right. These spicy spheres are out of this world!
Prep: 20 minutes
Cook: 15 minutes
Ingredients:
1 lb. raw lean ground turkey (7% fat or less)
1 cup shredded carrots, finely chopped
1/2 cup finely chopped onion
1/3 cup Frank's RedHot Original Cayenne Pepper sauce
2 tbsp. fat-free liquid egg substitute (like Eg g Beaters Original)
1/2 tsp. garlic powder
1/8 tsp. black pepper
1/2 cup fat-free plain Greek yogurt
2 1/4 tsp. ranch dressing/seasoning mix
Directions:
Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray.
In a large bowl, thoroughly mix all ingredients except yogurt and ranch seasoning. Firmly and evenly form into 24 meatballs, and place them evenly spaced on the baking sheet.
Bake for 10 minutes.
Gently flip meatballs. Bake until cooked through, about 5 minutes.
Meanwhile, mix Greek yogurt with ranch seasoning until uniform.
Serve meatballs with dip. Enjoy!

Seems like they would overly dry out with low fat ingredients and no panade0

I just Googled panade, discovered that I've been making meatballs and meatloaves all wrong, and will now spend the weekend cooking much better food. I love these forums.0
