Mini Cheesecakes

1 - 8oz. package softened cream cheese (1/3 less fat or fat free)
1/4 cup plus 2T sugar
1 egg
1/2 tsp. lemon juice
1/2 tsp. vanilla extract
1 1/2 graham crackers broken into 1 inch squares (I use chocolate grahams :heart: )

Preheat oven to 350 degrees. Line cupcake tin with 12 paper liners. Place a 1 inch square of graham cracker into each. With mixer, beat cream cheese and sugar; then add egg and beat. Mix in lemon juice and vanilla. Beat until smooth.

Spoon filling into each liner. Bake until set about 20 - 25 minutes. Cool.

Cover & refrigerate. I freeze some of them individually in small zip lock bags.
Calories: using 1/3 less fat cream cheese ~ 95 each
using Fat Free cream cheese ~ 70 each

:heart: I've served these at parties and everyone loves them. They're great with fresh fruit on top, and/or a squirt of whipped cream :bigsmile: .

    These sound great.. BUT...

    what do you mean by 1/4 plus 2T sugar?

    2 and a quarter tablespoons?

    what if oyu use splenda instead of sugar would that help?

    I don't see why splenda wouldn't work. If you buy bulk splenda its supposed to measure out exactly the same as sugar and sweeten just the same.

    You can definitely use Splenda. You will have less that calories & sugar... :wink:
