Hello everyone...

I wondered if anyone had a recipe for Chicken and Aubergine?! I know kind of chicken parmigiana but I don't want to breadcrumb the chicken...!

    I like grilled chicken breast with coriander pesto rubbed into it

    Ooh I made a lovely pork and aubergine thing last week that would be nice with chicken, will see if I can find the recipe. Try bbcgoodfood I think the one I did was aromatic pork but they have fab recipes. Chicken and aubergine curry would be good too

    Its a brilliant website, I use it all the time and even the unhealthier recipes can be adapted. Search Chicken aubergine and I'm sure you'll get loads of other recipes too.
