Menu for the week

So the cooking light website has a slide show that is a 103 money saving recipes http://www.cookinglight.com/food/everyday-menus/healthy-budget-recipes-00400000056656/

For the past 2 weeks I have let the family go through the slide show and pick out from that what they want to eat. I am hearing a lot less complaints, husband included, about dinner and my food bill is not quite as astronomical. It has a great variety of vegetarian and meat options and the recipes are pretty simple to follow. Most of them are also ready in under 45 minutes which is an added bonus. Here is our menu for the week:

Monday-Baseball game so we are going to have the grilled chicken wraps with baby carrots as a side. (portable and quick to make)
Tuesday-Baseball again so I will make the chicken and rice casserole tonight and then just pop it in the oven after the game to heat back up
Wed-grilled steak with onions and scallions
Thursday-Bacon pierogi bake with a spinach salad as a side
Friday-off work holiday so we are going to have Root-beer can chicken on the grill (The boys are very excited about this one) with potato wedges
Sat We are having baked Italian style cauliflower with turkey sausage and a build your own salad bar…( Another way to get my kids to eat salad, if I let them "Build it"

I have always cooked dinners so that has not been a huge change in this road to a healthier me, now it is just finding ways to make old family favorites better for us. I also like that I have been making enough to take the extras to work as a lunch each day. I hope this helps anyone who is struggling to find healthy alternatives to dinner so that you don't get stuck in a rut eating the same things.
