artichoke heart pasta

I made this for my dinner tomorrow it is so good and easy!

3/4 C Dry pasta
6 marinated artichoke hearts chopped
3 mini sweet peppers chopped
1 roma tomato chopped
2 C fresh baby spinach
1 T parm cheese
1 t chopped garlic in water

cook pasta, drain and return to pot. Add artichoke hearts, peppers, tomato, garlic and parm cheese. Mix and cook over low heat about 5 min. Turn off heat, add spinach and cover for 10 min. remove cover and stir in wilted spinach

I was originally making this for tomorrows lunch but it made so much i think i can get either 2 lunches or one pretty big dinner out of it for only 409 calories.

    That sounds delicious! I am going to have to give this a try! Artichoke is one of my favorite foods, but i only ever put it in salad!

    Sounds so goooood. Thank you for sharing. I think I will make it tomorrow with kale instead of spinach since I have a bunch that I need to use up. Also I love your profile pic.
