Counting Calorie Deficit

I've noticed some people count their calorie deficit. Why do they do this? How do you do this? Would I simply find out the caloric intake to maintain and subtract from it what I actually eat in calories? And, to double check: is it 2500 or 3500 calories, generally, equal to a pound of loss/gain?

Yes, you first have to determine your TDEE and subtract from it:
250 calories x 7 days = 1750 = .5 lb.
500 calories x 7 days = 3500 = 1lb.
750 calories x 7 days = 5250 = 1.5lbs
1000 calories x 7 days = 7000 = 2lbs.
