Fave Deviled Egg Recipes?

Hi All,

So I've never really cared for deviled eggs and I've recently figured out why- my mom has always over-cooked them so they get that awful green ring and the yolks are left chalky. So while cruising the net I came across this gem: http://altonbrown.com/baked-eggs/

I'm now inspired to try hard-boiled eggs again but will bake them instead; however I don't have any tried and true recipes.

So my question to the MFP group is what is your fave deviled egg recipe?

    I have a deviled egg recipe book by Emily Benjamin which has 50 recipes in it ....one of my favorites is

    GARLIC DEVILED EGGS

    6 hard cooked eggs
    1/3 cup mayo
    1/2 tsp yellow mustard
    2 green onions with tops, chopped
    1 garlic clove , minced
    1/8 tsp salt
    Paprika
    ~Slice eggs in half lenghwise: remove yolks and set whites asides
    ~In small bowl mash yolks
    ~Add mayo, mustard,onion garlic and salt
    ~Fill egg whites; sprinkle with paprika
    ~Refrigerate until serving

    I usually just boil my eggs about 9 minutes.

    I like to experiment a lot with eggs. Sometimes I make a tuna salad to go in them, jalapenos, onions and such. Sometimes I go plain ol' mayo and mustard with a sprinkle of smoked paprika. Never really followed a recipe.

    These deviled eggs are a huge hit..requested at every gathering. Make them like normal but add bacon and cheddar to the yolk mix. Everyone goes nuts for them. Ive also added diced jalapeño before (with or without the bacon and cheese) - also a big hit.
