If I had absolutely nothing keto-friendly in my kitchen right now and was just starting, this is what I would buy:
Produce: Spinach (and other leafy greens like kale, lettuce, super greens), mushrooms, cucumber, bell peppers, onion, avocado, broccoli, asparagus, brussels sprouts, green beans.
Meat: 85% lean grass-fed ground beef, chicken breasts (you can buy skin-on to raise the fat, but I prefer boneless/skinless), both pork and chicken sausage, pepperoni, salami, ham, bacon, roast beef, liverwurst.
Cheese: You can buy pre-shredded or a block and shred your own. Be sure to get full fat, not low fat cheese. I also like having string cheese as a snack or with my lunch.
Dairy: Eggs, sour cream, cream cheese, grass fed butter, heavy cream
Other: Tuna, full fat mayo, oils (olive, coconut and avocado), natural no sugar added nut butter (peanut, almond), almond or coconut flour, baking powder, almond milk, Stevia (it's a natural sweetener), hot sauce, unsweetened cocoa powder, red pepper flakes, sea salt, Italian seasoning.
Monday-Friday for breakfast I eat an egg scramble. First I sauté mushrooms and 1 or 2 cups of spinach in 1tblsp butter then drizzle usually 1/2 or 1tblsp of avocado oil over them. I pour in 2 organic large brown eggs and scramble them in the same pan, adding 1oz of shredded mozzarella at the end. This usually comes out to something like 3g net carbs/35-46g fat depending on how much oil I use.
Lunches tend to fluctuate a lot. I work in an office so sometimes I'll bring leftovers from the night before or sometimes I'll make something new. Many lunches have included tuna with full fat mayo and a mozzarella string cheese (no carbs) or a spinach salad with leftover chicken, sliced cucumbers, shredded cheese and full fat ranch dressing (6g net carbs, 24g fat, 26g protein). I've also brought turkey, salami and cheese roll-ups, liversausage and cheese cubes, lettuce wraps, sushi handrolls, chicken salad, etc.
Dinner is most frequently a stir fry. I cut up a sausage link or leftover chicken breast and saute it in butter, then add some combination of broccoli, asparagus, green beans, mushrooms and spinach, drizzle avocado oil and sprinkle red pepper flakes. It is very filing and so tasty. There is a plethora of places to find great keto recipes as well. http://www.ibreatheimhungry.com is my favorite blog.0
