Golden beetroot recipes please

Found a farm selling produce yesterday & got a bit carried away with the yumminess. I've got 4 medium sized golden beetroot & looking for something more interesting than just roasting them. I hear they are sweeter than thier purple counterparts so not sure what would work best. Only limitation is no dairy please
