I have rediscovered sweet potatoes! I have heard that the had too many carbs on south beach to eat all the time :mad: so i had one only in a blue moon. But i am ALWAYs too low on my carbs and whats better is i hear that they are really good for you, so sweet potatoes here i come!! :smooched:

    I heard that the sweet potato is lower in carbs then a regular potato.
    and as you said it is VERY good for you!
    Just do not slather it all up with Butter and you will be just fine! :smile:
    I have about 1 or 2 a week.
    Also being high in potasium, they help with the hurty muscles after exercise.

    Spray a cookie sheet lightly with olive oil

    Slice your sweet potatoes thinly and arrange on cookie sheet
    Salt lightly

    Bake at 400 for 15 minutes, flip and bake for another 10 minutes

    Sweet potatoe chips or fries. Very yummy.

    Sweet potatos and yams are amazing foods and very low on the glycemic index.

    I like to bake them and then put a little cinnamon on them. They are really good cold too.
