Newbie to weight training- advice please?

I started my lifestyle change about 11 weeks ago. It includes 1400 cal/day, more veggies/fruit, more protein, and cardio (mostly jogging). It's been going great so far, and... I've lost about 17 lbs!
But... I really want to start toning up. I do a little bit of weights here and there, but nothing regular. Problem is, I had a knee injury that makes anything like squats or lunges difficult. I'm just starting to find that without weight training, I'm still a little jiggly. And I want that to stop.
What are some good weight training exercises that someone with a bad knee can do?
