Crock-Pot Pork Recipe?

The pork roast is on sale for $1.69/lb again.
I am hosting an event tonight, so I need to get something in the Crock-pot that can be thoroughly neglected for about 8 hours, then taste great and amazing like I can totally pull off working full time, hosting awesome events, then pulling the domestic goddess card all in one day because I am the mother ****ing Übermensch.
It also needs to be low in sugars, low-carb and gluten-free.
I usually do Crock-Pot Carnitas but they take to long, I like to throw them on the stove top and mix the seasonings and shred as they are done cooking. I don't think I'm going to have time for any of that tonight. I'd like something BBQ-ish in nature.
Help me out MFP'ers!

I did a green pork chili in the crock pot one time by throwing in a pork roast, lots of tomatillos, and lots of onions. You could also add in poblanos. It was good and would be a good taco filling, too!0

A pressure cooker will yield better results than a slow cooker and also be much quicker...0

I've never owned or used a pressure cooker, but I would like to some day.
But I'm kind of busy today, and don't have time for an exciting new endeavor like that.0 -
I know it's cheating in the 3rd degree, but I'm really thinking about just dumping BBQ sauce on the pork, then shredding it and mixing it and doing the math, then eating up to 20 carbs (or however many I have left) and calling it good.0
