Increasing Calories without increasing carbs and fat

My questions to those who dare to answer. How do I eat enough calories without increasing my carb intake and fat intake. I have diabetes so an increase in carbs causes my blood sugar to spike. I try to work out at least 5 to 6 times a week. I do zumba and a lot of high cardio classes so I burn from 600 to 1000 calories in each class. I can't figure out how I am suppose to eat these calories back and therefore I am not eating enough food and not seeing the weight loss I am working so hard to achieve.

    lean protien...

    chicken, fish, seafood, skim milk, non fat yogurt specifically greek, low fat cheese

    Why do you not want to increase your fat intake to make up the calories? I'm type 2 diabetic and I basically try to keep my carbs under 80-100, protein at least 100 and the rest is fat.
