Here is an easy recipe that is healthy for you. Its my family's favorite lowfat veggie dish.

You can adjust the amount on any of the veggies or replace or take out ones you don't like.

All of the veggies should be cut into small cubes or strips about 1/2 in.
2 med. potatoes
2 med carrots
1 zucchini
1 red pepper
1/2 onion
1 tbsp olive oil
1 tsp basil
1 tsp oregano (I love oregano and I hated it in this. My mom also leaves it out, but feel free to experiment with it.)
1/2 tsp salt
1/4 tsp pepper
little garlic salt

Mix everything together in bowl. Stick to coat a 9x13 pan and put veggies in. Bake 375 for 40-60 min depending on how many veggies you have.

    I have a question. You said to put it in a 9x13 pan - does it need to be a metal pan, or could it be a glass baking dish?

    It can be either one...doesn't matter whether you use metal or glass.

    When you mix the veggies they should be moist from the olive oil and then your pour the veggies in the pan. So the olive oil will stick the pan...hope that helps!

    You can also wrap them up in foil and put them on the grill! They are soooo good that way!
