Slimmed Down Scalloped Potatoes

I love scalloped potatoes, but the recipe I used to make used heavy cream and lots of butter. Talk about calories & fat!

I found this recipe on Eating Well...

I did make a few changes. Instead of reduced fat sour cream, I used 0% fat Greek Yogurt. I also added 2T of nutritional yeast in with the yogurt mixture. Using the yogurt & nutritional yeast made the sauce really thick, so I added more like 1/2 cup of the milk mixture to the yogurt, rather than the 1/4 cup listed in the recipe.

It came out really good. Boiling the potatoes in the milk really made the whole thing creamy. Making it my way changes the nutritionals to:

173 calories per serving
1g fat
34g carbs
13g protein
(those are just the things I track)

    I was just thinking about this last night and wondering how I can make my scalloped potatoes healthier. After looking at the recipe link I've realised the only possibly unhealthy thing I've been doing is adding grated cheddar cheese on top! I don't add sour cream either, but might have to try the Greek yoghurt.
