Thai Pineapple Fried Rice
I just made this for a late lunch/early dinner, and it was amazing and really filling with a side salad:
Thai Pineapple Fried Rice
1 tsp olive oil
1 cup freshly cut pineapple (finally just did it on my own)
1/4 cup rice
1/2 cup onion
1/2 red bell pepper
1 large egg
I cooked the rice in vegetable broth in the rice cooker for about 15 minutes, then sauteed the onion and bell pepper in olive oil for a few minutes, until tender. Added pineapple and rice until pineapple became fragrant. Whisked the egg and added it, slowly incorporating it into the dish, cooked thoroughly. Served.
Made a fantastic meal, but next time I might try to add some spice to it - I love spicy food! Sauteed tofu would also be a great addition next time!
